I want to tell you a story of how I came to this point in my life, and why I want to share what I know with others.
I have always had a passion for baking, and fermenting (slow food). I also enjoy cooking, creating and trying new things.
Now a grater / zester may seem like an odd kitchen tool. However, lets take a look at it in more detail. The parts of food we throw away, peels, cores, seeds usually have the majority of nutrients in the food.
There are six different groups of food that are ideal for a grater / zester.
Other kithen tools just don't do the same thing. There are many health benefits and culinary uses, I want to share with you.
But first I will answer some basic questions. Afterwards, I will present you with an offer to put a little zest in your life.
What is a zester?
A zester is a special kitchen tool that is used to shave bits or strands from the outer most layer of covering on some foods.
Zesters are available in different types. The most common has a handle at one end and a long narrow stainless steel blade with small cutting holes.
The cutting holes remove narrow shavings of zest from citrus fruits as the tool is pulled along the skin of the fruit. The zester cuts deep enough to remove the colored portion of the skin, or zest, but it does not cut deep enough to remove the bitter layer below called the pith.
The zester is easier and more efficient in removing zest than other kitchen tools.

Why should I add zest to my food, recipes, and dishes?
Zest, especially citrus zest has a very complex and deep flavor. Think of juice as one instrument. Zest is the rest of the band or orchestra.
Citrus zest gives depth and meaning to dishes by infusion. The aromatic oils of citrus are found in the skin. The tangy and floral notes, add abstraction to your food.
Other foods when zested or grated impart a unique flavor, not found by just using the food itself.
A little nutmeg, cinnamon, or chocolate can bring a dessert and beverage alive. Using a zester grater on ginger or garlic, can wake up any dish.
What are the uses of a zester?
The most common use for a zester is to shave bits or strands from the outer most layer of citrus fruits such as lemon, lime, oranges, tangerines, blood oranges, and grapefruit.
By adding this layer to raw or cooked foods, the flavor of the food being prepared is enhanced with the oils of the fruit.
Zesters can also be used to cut curled shavings from blocks of chocolate, creating attractive garnishes or decorations for desserts.
Easily turn root vegetables such as ginger, horseradish, turmeric, galangal, tomatoes, potatoes and garlic into a paste.
Spices like nutmeg, cinnamon, cardamom, can be made into a fine powder. Cheese like parmesan or a semi-soft mozzarella can be turned into a fluffy pillow. Other uses include frozen bananas, very cold butter, toast to make bread crumbs, hard boiled eggs, and truffles.
The possibilities are really up to your imagination.

What are the best foods to give and receive zest?
The possibilities are really endless. If you can think it, it can be done. Experimentation can be fun.
Here is a list of commonly zested foods and common types of dishes they enhance. Any of these can be used as a garnish.
Citrus: Lemon, Lime, Orange, Grapefruit, Tangerine, Mandarins, Blood Oranges

Uses: stir-fry, sauces, marinades, cookies, cakes, muffins, beef, chicken, pork, salad dressing, smoothies
Cheese: Parmesan, Fontina, Romano, Mozzarella (low moisture), Asiago
Uses: pesto, salad, pizza, tomato sauce, pasta, spreads,
